This range of Paella pans are designed specifically for use with contact hobs (Electric and induction hobs, Agas and Rayburns). Completely flat
bottomed paella pans, with a double thickness base to aid heat distribution.
Why you can just use a “normal” Paella Pan on one of these types of cookers?

Traditional Spanish paella pans have a very slightly curved base to allow the onions, garlic and oil to collect in the middle so that you can sauté
them with tomato and get your “sofrito”. This slight curve means that a normal pan will not sit comfortably on anything other than a gas hob. A
normal paella pan will wobble on anything else.

Cooking in a normal pan over gas, a burner or an open fire means that the flames themselves spread when they hit the underside of the pan and so
distribute the heat evenly. If you used a traditional paella pan on a contact hob, you will only get cooking where the pan touches the hob – the
base of these special pans heats up all over and means you get even cooking.
You can still use these special induction hob paella pans over and open fire using one of our fire stands or on one of our outdoor paella burner.
